Yes I was a victim of height discrimination myself. I was a full member of the rotation in middle school basketball, one of the top eight players on the team, but as years went on I began to lose minutes to taller players. Seems that in high school, they don't believe that 6'3" centers can do the job.
The point of this sad tale is that height matters for NFL QBs because they have to be able to see. Doug Flutie's career ended in 2005. Kyler Murray is a freak athlete. Those are rare exceptions to this rule. Nobody is going to draft a guy (higher than the 7th Round) hoping that he can be the next Doug Flutie. Stetson will get his chance, but probably would be better off trying his luck up in Canada like Flutie did.
