Why aren’t all players choosing to wear them? Are there any drawbacks to wearing them other than the way they look? What am I missing?

Why aren’t all players choosing to wear them?
Because they are players so there's all kinds of resistance form look to feel etc, even though the safety advantage is obvious.
That said, I think they are already on to position-specific helmets that are an alternative and supposedly equal from a safety perspective
